Italian Stuffed Bell Peppers

INGREDIENTS
  • 6 bell peppers (red, yellow and orange work best)
  • 5.5oz box risotto of your choice
  • 1.5 lbs. bulk italian sausage
  • 10oz can diced tomatoes
  • 3 cups sliced mushrooms
  • 1 1/2 cups Italian blend shredded cheese
  • Salt and pepper to taste
DIRECTIONS
  • Cut tops off peppers. Remove seeds and cores. Put aside. Cook risotto according to instructions on box. In a large pan cook sausage, breaking into bite-sized pieces. Add mushrooms to sausage and sauté for 3 minutes or until cooked. Add salt and freshly ground pepper to taste. In a large bowl combine cooked risotto and mushroom and sausage blend. Stuff peppers half full and sprinkle with cheese blend. Stuff peppers until full, then top each with 3 tbsp. diced tomatoes. Sprinkle each pepper with rest of cheese. Place peppers in baking dish sprayed with non-stick spray. Bake at 350° for 30 minutes or until skin on peppers starts to wrinkle.
