Poached Pears with Stilton Sauce
Serves 4
From the kitchen of Holly Wendt, Proprietor
INGREDIENTS
- 4 Pears, firm and ripe
- 2 1/4 cups Quivira Zinfandel
- 1/2 cup sugar
- Stilton Sauce:
- 2 Tbsp. Sugar
- 1 large Egg yolk
- 1/3 cup Milk
- 1/3 cup Crumbled Stilton cheese
- 1/4 tsp. Vanilla
DIRECTIONS
- Peel pears leaving stems. Cores may be removed from bottom with a small spoon.
- Bring wine and sugar to a boil.
- Add pears and simmer until just tender when pierced with a toothpick.
- Turn pears occasionally while cooking.
- Cooking can take 10 - 30 min., depending on ripeness.
- Remove pears and boil syrup to reduce to about 1/2 cup.
- Pour syrup over pears and chill thoroughly.
- In a bowl whisk sugar and egg yolk together.
- Heat milk until scalding and whisk into egg and sugar.
- Return to pan and cook over medium-low heat until mixture coats spoon.
- Add Stilton and stir until cheese melts.
- Chill.
- To serve, coat pears with syrup and place each on a plate. Spoon syrup over half of pear, Stilton sauce over other Half.
