Roast Beef with Petite Sirah
INGREDIENTS
- Beef Rib Roast (approximately 6 lb.)
- 1 Tbsp. Chopped Shallots
- 1 Clove Minced Garlic
- Ground Black Pepper
- 2 cans Beef broth
- Quivira's Petite Sirah
Dry Herbs (for fresh use double quantities)
- 1/2 tsp. Rosemary
- 1 tsp. Thyme
- 1 tsp. Oregano
- 2 tsp. Basil
- 2 tsp. Tarragon
DIRECTIONS
- If dried herbs are used, blend them in a bowl with 3 Tbsp. of butter. Otherwise, blend finely chopped herbs and rub into fat side of meat. Roast at 325° basting every 15 minutes with Petite Sirah. Do not allow pan juices to dry out. At desired doneness, remove roast to carving platter and deglaze roasting pan with broth and wine. Reduce the liquid until it becomes a rich sauce. You may whip in 2 to 3 Tbsp. butter if desired. Salt to taste. Pour sauce over carved meat just before serving.
