Caribbean Squash Soup
A hearty fall and winter soup!
From the kitchen of Holly Wendt, Proprietor
INGREDIENTS
- 2 Tbsp olive oil
- 1 lg. Onion, chopped
- 1 lg. Clove garlic
- 1 lg. Medium hot red pepper, diced finely
- 2 lg. Stalks celery, chopped finely
- 1 buttercup or butternut squash, peeled and diced in 1/2 in. pieces
- 1 - 15 oz. cans chicken broth
- 1 - 15 1/2 oz. can chopped tomatoes
- 2 tsp. Salt
- Pepper to taste
- 1 Bay leaf
- 1 tsp. Turmeric
- 1/2 cup chopped Parsley
DIRECTIONS
- Sauté onion in olive oil in soup pot until soft but not browned.
- Add garlic, red pepper and celery and cook briefly.
- Add squash, broth, tomatoes, salt, pepper, bay leaf and turmeric and simmer until squash is cooked.
- Remove bay leaf.
- Add parsley and serve with a dollop of whipped cream or a swirl of heavy cream.
