Chocolate mousse with zinfandel


Taverna SANTI

INGREDIENTS
  • 1 pound Good quality bittersweet or semi-sweet chocolate, broken into pieces
  • 5 eggs at room temperature, lightly beaten
  • 1/2 c. 1999 Zinfandel, Wine Creek Ranch
  • 1 qt. Heavy cream
DIRECTIONS
  • Melt the chocolate in a stainless steel bowl over a pot of simmering water (or double boiler).
  • In a separate bowl, mix the eggs and the Zinfandel.
  • When the chocolate just melts, pour the egg mixture into the chocolate and whisk until completely incorporated.
  • Whip the cream to soft peaks, and fold into the chocolate mixture.
  • Cover with plastic wrap and chill in the refrigerator for at least 3 hours.
  • Serve in chilled bowls with a dollop of whipped cream and the rest of the Quivira Wine Creek Ranch Zinfandel!
