Search: Home    Shop Quivira    Mailing List    Trade/Media Spuma di Cioccolato al Zinfandel Chocolate mousse with zinfandel Taverna SANTI INGREDIENTS 1 pound Good quality bittersweet or semi-sweet chocolate, broken into pieces 5 eggs at room temperature, lightly beaten 1/2 c. 1999 Zinfandel, Wine Creek Ranch 1 qt. Heavy cream DIRECTIONS Melt the chocolate in a stainless steel bowl over a pot of simmering water (or double boiler). In a separate bowl, mix the eggs and the Zinfandel. When the chocolate just melts, pour the egg mixture into the chocolate and whisk until completely incorporated. Whip the cream to soft peaks, and fold into the chocolate mixture. Cover with plastic wrap and chill in the refrigerator for at least 3 hours. Serve in chilled bowls with a dollop of whipped cream and the rest of the Quivira Wine Creek Ranch Zinfandel!
